Best BBQ Ribs yet!



This weekend Auntie Holly came down from WA!  She requested BBQ as a belated birthday celebration.  Guess you can't really BBQ when it rains all the time!  So we had the works yet again, the Chipped Beef Dip for the appetizer (we can't thank Gayle enough for this one - its our family staple now!), vegies and dip, and a relish & olive plate for appetizers, BBQ Short Ribs, BBQ Chicken for the main course, Vegie Pasta Salad, Mac and Cheese, and Potato Salad for the sides.  For dessert Lemon Cake, Chocolate Cream Pie, Chocolate Cream & Peanut Butter Mousse Pie, and homemade whipped cream.  I get my peanut butter fettish from my dad LOL.  I can eat just about anything if it has peanut butter on it LOL!

My dad made homemade vanilla and chocolate ice cream too!  This has also been a family tradition.  Usually from March thru sometimes as late as October, every family get together dad makes ice cream!  I can remember as a kid always wanting to "help" him make the ice cream.  My job was the ice and rock salt moniter.  Well, that lasted one batch of ice cream because I apparently used about 3/4 of the bag of rock salt!  I think the only other time my dad was as upset with my "help" was when I tried to help clean up and poured the ice and salt mixture out on the grass!   Yeah, that patch didn't make it LOL.  Just a few of the lessons I have learned along the way!

We usually always have a relish tray.  I never really understood the purpose but my mom always put one out so I think we've just keep that tradition going.  I can only remember my sister taking all the black olives, putting them on every finger, and her running around showing everyone her new black paws!  You know what the funny thing is?  Her daughter did the same thing when she was little!  LOL

So why were these ribs the best yet??!!!  Well if you've done short ribs, you know they are big hunks of meat on a bone.  This time I marinated them for 3 days and actually injected each one with marinade too!  I put the ribs in the smoker about 10am, brushed them with BBQ sauce around 12pm and then removed them and put them in foil around 2pm and wrapped them tight for another 1-1/2 to 2 hrs.   I think it was the foil part because those ribs were fall off the bone tender!  Usually they are good, but ya got to work 'em!  These ribs just fell on to the plate and melted in your mouth!  My husband said, "I put my foot in 'em this time!" and that these were the best yet!  He loved them so much he did all the dishes  LOL  (He usually does but this time he just said it was because the ribs were so good lol)!   We were watching one of those suspense shows on TV one time where the husband had the wife killed for the insurance money and I asked my husband, "Babe, you wouldn't do that to me would ya?!!"  And he replied, "Heck no!  You're ribs are too good!!!"  LOL

I may just have to revise my recipe online to reflect this new method!  Oh, and the peanut butter pie I made.........ahhhhhhhh!!!!  You can only have one piece because it's soooooo rich and you'll need to work out about 5 hrs straight afterwards but it's worth it!  lol  It was just creamy, peanut buttery bliss!  The kind that makes your eyes roll back in your head!  lol  I think I will post this recipe on the site too so look for it!

All and all it was a great celebration!  It's always good to have the family together!  I just love my family :)  And the best thing.....the left overs!!!  We are gonna be eating leftovers for days!  Ahhh BBQ!!!!!  :)
